This is a recipe that I’m super excited to share! I love soul food!
One of the key staples to any soul food plate is baked mac and cheese! When I transitioned to veganism I vowed to make a Mac and cheese that wouldn’t get laughed off the holiday table🤷🏾♀️ Here’s a recipe you can bring to the cookout. You can place this Mac and cheese on the table at thanksgiving and I guarantee no one will complain about the Mac and cheese being vegan. I’ve worked on this recipe for about a year and a half. This is by far my best vegan Mac and cheese I’ve ever made and it due to the ingredients! You must use so Delicious for this recipe. This is not a sponsored post.. this cheese is necessary for this Mac and cheese. The way it taste and melts, I can eat it straight out of the bag!
I got my cheese from Sprouts in Temecula this week it was $5.99 a bag (sometimes there’s coupons so you can check The soy Delicious website for coupons prior to making the Mac and cheese) the cheese makes the Mac and cheese trust me on this. Let’s get started!
Here’s what you need:
1 Box of elbow macaroni
1 bag So Delicious mozzarella (8oz bag)
1 bag So Delicious Mozzarella
1 small tub vegan butter (I used smart balance)
1 rice milk
Cracked black pepper
Sea Salt
Garlic powder
Casserole dish
Whisk!
Okay time to cook!
Pre Heat your oven to 350 degrees.
Prepare the entire box of pasta and set it aside. Melt about 1/4 cup of the smart balance and toss it into the pasta. Vegan Mac and cheese cooks better when you coat the pasta with butter. The cheese adheres to the pasta and melts a lot better!
Next let’s make the cheese sauce
Cheese sauce
1 cup of vegan butter (again I used smart balance🤷🏾♀️)
2 cups of rice milk
3/4 cup So Delicious mozzarella cheese shreds
3/4 cup So Delicious cheddar cheese shreds
Garlic power/ black pepper/ salt
(taste as you go.. that’s why there’s no measuring there.. taste as you go. That’s the best part!)
In a small sauce pan on low/medium heat melt butter and garlic powder, slowly sprinkle in cheese about a quarter amount what recipe calls for whisk constantly to make a smooth an rich sauce slowly add milk
Taste while in whisking, season as you go, slowly add cheese, milk continue to add cheese and till blended and creamy
Next you combine the cheese sauce to butter soaked noodles.
Fold the sauce into the noodles covering them completely, the key to this Mac and cheese is the sauce you really want to coat all the noodles add a little melted butter if necessary to fully coat the noodles.. you want CHEESEY GOODNESS PEOPLE!
Next spread the sauce covered noodles into the casserole dish taste and season as you layer into the dish.
Sprinkle the remainder of the cheese from the bags of cheese over the Mac and cheese. I mix them together to make sure it’s completely covered and coated with cheese and cheese sauce. Next place the Mac and Cheese into the oven for 30 minutes center rack, Then broil 5 minutes on high on top rack for crunchy top.
This Mac and cheese is so rich and delicious! It’s perfect for the holidays!
