Easy Vegan Lasagna recipe

This is only vegan lasagna recipe you’ll ever need! I’m going to tell you which vegan cheese to purchase! I’m going to tell you where to buy your vegan lasagna noodles so you can make a lasagna that your family will rave about!

I made this lasagna last week as my meal prep meal. I had lasagna, salad and homemade vegetables soup for lunch last week.

The lasagna was simple:

For your lasagna to come out perfectly ooey, gooey, cheesey and delicious you HAVE TO USE SO DELICIOUS MOZZARELLA SHREDS!

I can only find this cheese at Sprouts in Temecula. I’ve looked at other stores, so far only Sprouts carries So Delicious Dairy free Mozzarella. It cost me about $5.99 a bag for a super cheesy lasagna around the holidays I use two bags.. but I’m trying to eat better 😅

You really only need one bag for this recipe.

You also need vegan lasagna noodles. I found mine at sprouts in Temecula. You can probably find them at any Whole Foods store or any store that has a vegan or gluten free section. Look for lasagna noodles that don’t have diary and eggs and you’re good.

I use boca meatless crumbles as my meat for this lasagna recipe.

I use this as my ground beef substitute in many recipes. It taste just like ground ground beef when seasoned correctly. I use it for spaghetti, Shepardess pie, enchiladas Vegan Taco Lasagna

Boca meatless crumbles are so versatile! They’re a staple in my home and typically cost around $3.50 for a package.

This recipe only requires one pack of crumbles to feed my family of 4!

You also need pasta sauce.

and casserole dish of your choosing!

Once you have all you need preheat your oven to 350.

Quick warning.. there’s no exact measurements for this.. it’s a quick lasagna.. basically separate your ingredients.. layer and bake but.. I’m still going to break it down..

Easy vegan Lasagna

What you need:

-vegan lasagna noodles

-Vegan meat crumbles

-Seasoning for meatless crumbles (salt, pepper, garlic powder, basil)

-So Delicious Mozzarella shred

-1 cup diced onions

-1 jar of pasta sauce

-casserole dish

Preheat over to 350

First: boil lasagna, rinse set aside.

Next: in a large skillet heat about 3 tablespoons of oil. sauté onions until translucent. Add meatless crumbles to skillet. Cook throughly. Season to taste using salt, pepper, garlic powder, basil. Set aside

Next: cover the bottom of the casserole dish with a thin layer of pasta sauce.

Lay cooked lasagna noodles on top of the sauce.

Layer sauce, meatless crumbles and top with cheese. After the cheese repeat the process again.

Lasagna noodles-sauce-meat-cheese.

Don’t be shy when layering the So Delicious Mozzarella

(You want your lasagna to be super cheesey! This vegan cheese actually taste amazing! It’s the best! I use it every year for my So Delicious Baked mac and cheese it’s absolutely incredible!!)

Continue Following the layering process until your casserole dish is filled.

The final layer should be lasagna noodle, sauce and cheese.

Cover lasagna with tin foil in order for the cheese to get nice and gooey!

place lasagna in the oven cook for 45 minutes to bake covered.

Then broil uncovered for 5 minutes. Take from oven let cool about 10 minutes.. cut and serve.

I promise this is the ooooiest! Gooiest! Cheesiest! Lasagna you’ve ever had!

It’s perfect if you’re new to veganism and want a good old fashioned comfort food recipe this is the one! I devoured this lunch! I had to battle Chris and the girls for the last piece! It was so hearty, delicious and filling. The cheese was decadent and velvety! I love a good lasagna and this was BETTER than good!

Easy, moderately budget friendly. The cheese is $5.99 but it’s honestly worth it!
